  1. Boil chicken thighs with green onions, celery, and salt and pepper… remove celery and green onion, throw away, reserve chicken broth if desired (I found if you don't use the chicken broth it makes it less runny… sets it up firmer) drain water off chicken thigh pieces
  2. Mix cheese wiz, both soups, and drained rotel together on a sauce pan and heat up…
  3. Using a 5qt casserole dish (I use my removable crockpot dish) spray dish with non stick spray and place 2-3 tortillas on the bottom then layer as follows: chicken, soup mix, cheese… top with tortillas and then repeat process… do this til the chicken, soup, and cheese is used up… (usually 3 layers) finish off with tortillas on top… you can now top the casserole with the chicken broth or not… (purpose of the broth is to keep tortillas moist during baking*)
  4. NOTE* I like mine firm… I leave the broth out… it makes the tortillas firm on top and the whole dish firm..
  5. Cover with lid or aluminum foil bake 350°F for half hour or til the cheese is melted through…
