  8. insert a thermometer into the center
  9. place into the smoker and cook until center of reaches 160°F about 3 1/2 to 4 hrs.
  10. If you want to add a glaze you could mix up ketchup, and pepper juice and mop it on the last 30 minutes of cooking time
